This is perhaps the most daunting task of owning a cast iron skillet and, indeed, the thing that owners get wrong the most. But here’s the thing: it’s not actually that hard! So here are some tips to get it done right.
1. Clean your pot after every single use. This will make the process much easier on you in the long haul. To do this, you’ll want to grab some paper towels to remove any food or oils left behind.
2. Don’t use a brush that is abrasive or that is metal. Using these kinds of brushes can cause you to damage your pan, or at the least, remove the good seasoning that you’ve built up. Use a brush that has sturdy bristles but that isn’t made of metal.
3. It’s okay to use a bit of soap if you want, but you really don’t need to--scrubbing with the brush is enough. If you do, you must make sure that you rinse super thoroughly to get it all off.
4. Do not let your pan air dry or drip dry. After you have scrubbed with your brush, put your pan back on the burner to allow the heat to dry your pan completely.
5. Oil her up! Remove the pan from the heat and then massage in a bit of oil evenly to your entire skillet with a paper towel. Use additional paper towels to ensure there are no spots that are especially oily.

There are tons and tons of different suggestions out there on how to properly season your cast iron pots and pans. We’ve narrowed them down to a few basic methods that most people can agree on.
1. The Salt Method: Cover the base of your pot in about a quarter-inch thick of kosher salt. Then you are going to want to add another ½ inch or so of oil (do not use olive oil as this does not have a high enough burn temp). Put on the highest heat setting on your stovetop. Dump out the contents in a heat-safe bowl when you notice the oil smoking. Then ball up a bunch of paper towels and rub down the inside of your pot until all is smooth and there aren’t big patches of oily spots.
2. The Shortening and Oven Method: For this method, you’ll want to simply add shortening that you have melted or veggie oil in a layer that is thin on the pot. Crank the oven to 375 degrees Fahrenheit. Place the pot upside down on the middle rack, making sure that you place a dish underneath the pot so that it can catch the oil dripping off and save you a lot of clean up later. Bake in the oven for 1 hour.
